Pickled Pork

Quick and easy pickled pork recipe that the whole family will enjoy.

Ingredients

1kg piece of pickled pork

1 tablespoon brown sugar

1 tablespoon of malt or white vinegar

Peppercorns, lightly crushed

1 bay leaf

Method

  1. Combine the brown sugar, malt vinegar, peppercorns in a saucepan large enough to hold the pork.
  2. Add the pork and water to the pot (enough to cover the pork). Bring to the boil then reduce to a low simmer. Cook for 50 mins per kilo.
  3. Let it cool so you can handle and slice to serve. Best accompanied with mash or roast potatoes, cabbage and parsley sauce.

Notes: You can also do a quick version, just place the pickled pork in a pot of cold water and follow the cooking instructions.
