A celebration of Irish Christmas, spiced beef has been a long standing tradition among many Irish families. The secret to spiced beef is in the curing rub, where we use a mix of cloves, brown sugar and xyz and rub the mix gently into a piece of corned silverside. To cook, simply boil with some root vegetables and slice thinly to serve- either hot or cold.
