Our raw gammon ham is produced in small batches, using the finest Australian pork legs. Once cured, they are soaked overnight in our traditional Irish brine and hand strung to maintain their shape. We can cut our raw gammon joints to preference as either fillet ends or middle joints, or can be purchased as whole legs (approx 7kg).
All our raw gammon joints come with cooking instructions on how best to boil, bake and glaze your piece. For the perfect Irish Christmas dinner, we suggest to pair with a piece of our hand cured spiced beef.
